Sure, we may have all seen the viral TikTok videos where one partner plans out the date for the other, laying out an outfit and a time of day to be ready for. As one of the first restaurants on the island of Ambergris Caye, this family-owned and operated eatery tackles traditional Belizean food with an upbeat (and upscale) twist, particularly focusing on Maya and Mestizo cuisine alongside sustainably-sourced seafood. Chef Jennie Staines leans heavily on comforting Yucatec flavors for her signature dishes, like annatto-spiced pork Pibil and rich coconut curry for sweet stone crab. Don’t even get us started on the drinks.

Relax in the sandy-floored dining room, warmly interrupted by a light-wrapped flamboyant tree, or in their air-conditioned seating area, peppered with local art. With over 40 years of experience under their belt, it’s easy to see why Elvi’s Kitchen is a matchless foodie hotspot, again and again. 

3. Flyover tour of the Great Blue Hole

If there’s one thing that is incredibly meaningful without requiring too much effort, it’s an experience. Beyond this entire trip, this is the mic drop moment. Inscribed as a composite of Belize’s World Heritage Site, the Great Blue Hole–whose official name is the Blue Hole Natural Monument–is an almost perfect circular chasm of deep, indigo blue, bordered by a ring of underwater coral that almost resembles land from above. From Ambergris Caye, it’s about a 2.5-hour drive by boat; luckily, domestic airlines like Maya Island Air offer flyover tours of the Blue Hole, while Astrum Helicopters goes further for a private tour, including ‘reef surfing.’ Clocking in at 1000ft across and more than 400ft deep, Belize’s Great Blue Hole is actually the only “blue hole” on earth visible from space.
