It’s been a few years since we could do it properly, but with more and more people back to hosting again this year, this is one trick to have up your sleeve for a special seasonal serve. Whether it’s sweet or strengthened with a generous serving of locally produced rum, spirits are also a centerstage item for Christmas in the Caribbean; think Trinidad’s Ponche De Crème, Jamaica’s Spiked Spiced Sorrel, and of course, Belize’s Rum Popo. And it’s not uncommon for guests to bring a bottle of their own recipe, which is why this festive rum cocktail sets itself apart for Christmas in the Caribbean: think a cheery twist for the Piña Colada fans out there. Using Traveller’s Fiesta spiced rum, warm up any winter blues with hints of gingerbread, amaretto, and more.
Ingredients
- 50ml Traveller’s Liquors Fiesta Spiced Rum
- 10ml Fresh Lime Juice
- 10ml Gingerbread Syrup (Monin or homemade works best)
- 20ml Amaretto Liqueur
- 30ml Cream of Coconut
- 40ml Pineapple Juice
Instructions
Add all ingredients into a shaker. Shake with ice, then strain and serve long over cubed ice. Alternatively, add all ingredients to a blender and blitz with a small scoop of ice until smooth. Pour and enjoy. Add a pineapple wedge, a cherry, and/or candied ginger to garnish. Enjoy!
