You can even make your own homemade flour tortilla with the following recipe. Set your grill and be ready to delight your senses with this Finger-Licking Belizean BBQ!

BELIZEAN BBQ SAUCE

Ingredients

  • ¼ cup red wine or apple cider vinegar 
  • ½ cup of water 
  • 2 tablespoons brown sugar 
  • 1 tablespoon yellow mustard 
  • ½ teaspoon freshly ground black pepper 
  • ¼ teaspoon cayenne pepper, to taste 
  • ½ lemon or lime, juiced 
  • 1 red onion, minced 
  • ¼ cup butter 
  • ½ cup tomato ketchup 
  • 2 tablespoons Worcestershire sauce 

Directions

Reduce by simmering the above ingredients uncovered for 40 minutes or until it looks like molasses. Add the last 2 ingredients and bring to a boil for 2 minutes. Spread on your grilled chicken and enjoy it!

FLOUR TORTILLAS

Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons vegetable shortening
  • 3/4 cup water

Directions

Combine flour, salt, and baking powder. Cut in shortening with a fork. Add water, a little at a time, and mix until the dough comes together. Place on a lightly floured surface and knead for 2 to 3 munites until smooth. Divide the dough into approximately 10 to 12 pieces: roll each piece into a ball. Cover and allow to rest for 10 to 15 minutes. Preheat a nonstick griddle over medium to high heat. Flour a rolling pin and sprinkle flour on a clean surface. Flatten one ball at a time until thin. May also be flattened manually on a greased plate. Place on the hot griddle and cook for 1 to 2 minutes on both sides. May be slightly browned.

Makes 10 to 12 – 6” round tortillas.
